Easy, Light “Caramel Corn”

October is a great time to enjoy fall foods and sweets! I often find myself having caramel corn this time of year, but it has a lot of sugar and extra calories that we don’t need. Here is my simple recipe for lighter caramel that will be a hit at any party.

Ingredients:
-1 bag of organic plain popcorn
-about 1/4 c butter
-about 1/2 c honey

Directions: Pop your popcorn according to the directions on the bag. Then in a coffee mug heat the honey and butter mixture until it melts. (I usually go for a 2 to 1 ratio of honey to butter.) Put the popcorn in a casserole dish in one flat layer, pour in the honey and butter and mix. Place in the oven at 375 for 5-10 minutes, until slightly hardened. Finally, the fun part is adding spices and candies/nuts to your caramel corn! You can take anything I do and tweak it to make it your own.

Spicy Chocolate Caramel Corn:
After baking your caramel corn, melt some chocolate (I recommend milk or dark) and add a few pinches of cayenne to it, then mix. Drizzle your chocolate mixture over your popcorn. If you would like, add nuts or m&ms for even more texture and chocolatey flavor!

Sweet and Salty Caramel Corn:

Add a mix of 2 tbsp of brown sugar to ½ tsp of salt together. Sprinkle over your caramel corn and incorporate it as best you can. Add some toasted cashews to that mix, and again, anything else that you love! (Maybe some candy corn?)
