Stuffed Acorn Squash


This recipe is easy, delicious, and vegetarian.  Plus it’s great for Instagram pictures.  I love it!

Ingredients:
Acorn squash
2 cups brown rice, cooked
About 1/4 onion, chopped
1 apple, chopped
Butter
Salt
Pepper
Cinnamon
Goat cheese


Preheat oven to 450 degrees.  Cut the acorn squash in half and scoop out the centers so the halves can be stuffed.  (You can save the seeds, but they aren’t needed for this recipe.)  Place the squash halves in a roasting pan and brush about 1 tablespoon of melted butter on them.  Season with some brown sugar, salt, and pepper.  Bake for 25 minutes.


While the squash is baking, prepare the rice and chop the onion and apple.  (You can add celery, cranberries, whatever you like!  You can also add chopped walnuts into the stuffing mixture later.)  Melt some butter in a pan over medium heat and sauté onions until they begin to soften.  Add in the apples. 


Once onions and apples are softened, add the prepared rice to the pan and heat through, seasoning with salt and cinnamon to taste.  Mix in goat cheese so it melts evenly.



Stuff the pre-baked squash halves with your stuffing mixture (you can drizzle some melted butter over the top) then bake again for 25-30 minutes, until the squash is tender.
