Thanksgiving: Side Dishes


Apple and Goat Cheese Stuffing

This stuffing is sweet and savory!  It’ll balance the rest of your Thanksgiving meal perfectly!  This recipe is also very versatile and can be tweaked to your tastes.

Ingredients:
2 apples, cubed
3 sticks of celery, chopped
1 onion, chopped
5 tbsp butter
2 cups chicken broth
12 oz of cubed stuffing (unseasoned, seasoned, wheat, white, whatever!  I use a        
   mixture of wheat, white and seasoned)
4 oz goat cheese

Directions: Preheat your oven to 350 degrees.  Cut up your apples, celery and onion.  In a large pan, melt the butter over medium heat then add your celery and onion and stir until tender-crisp.  Add the chicken broth and stir occasionally as you bring it to a boil.  Put the cubed stuffing in a large bowl, then pour your broth and veggies over and mix well.  Stir in your apples then mix in the goat cheese.  Put the stuffing in a large casserole dish and bake for 30 minutes.


For a little extra texture, add some chopped walnuts!  You might also enjoy this stuffing with dried cranberries or sausage.


Sweet Potato Mash

Ingredients:
3 medium sweet potatoes, peeled and cut into 1/4 inch pieces
1 tbsp of brown sugar
1 tsp of cinnamon
1/4 cup of sliced pecans, toasted
1 tbsp of butter, unsalted
Salt, for cooking water
Pepper

Directions: Boil water in a big pot, then add a small handful of salt to the water. Add potatoes and cook for 20 minutes, until a knife can easily pierce them. Drain and return to the pot. Mash with a potato masher. Once mashed, add the butter and mix. Then add the cinnamon, brown sugar, and pepper, and mix again. Finally, top with toasted pecans.
