This recipe is really quick and easy, healthy, and super
delicious! It’s completely customizable
so make it however you like it.
Ingredients:
1 cup of quinoa
1 cup of pineapple juice
Diced/crushed pineapple
Diced Onion
Black beans
Red chili powder
Salt
Anything you want to add (for example, diced red pepper)
Directions: Prepare the quinoa according to the directions
on the package, substituting the water for the pineapple juice. In a large skillet, sauté the onion,
pineapple and black beans (and peppers or whatever else you added) until
softened. Mix in the prepared quinoa
then add salt and chili powder to your liking!
